The problem

What makes meat orders tricky

01

One word, two cuts

“Skirt” and “short rib” each cover two items with different prices and uses. Lines like these are held as ambiguous, with the account’s past choice suggested first, so a person confirms the cut in a second.

02

Blends and grades are separate items

80/20 and 73/27 ground beef, choice and prime, bone-in and boneless are all matched to their own item codes. If the blend or grade isn’t said, the line asks.

03

Ordered by the pound, sold by the pound

Per-pound items stay per pound on the ticket, at your per-pound price. Case items like 40 lb chicken thigh cases stay in cases, so the export matches how you invoice.

The words a kitchen uses for a cut don’t always match your item description. These are typical mappings, and when the ticket asks.

FAQ

Questions from meat distributors.

How does it handle cuts that could mean two things?

The line is flagged as ambiguous and lists both items. The cut the account bought before is suggested first, and a person confirms it before the order can be approved.

Does it handle catch-weight items?

Per-pound lines carry the ordered weight and your per-pound price. Final weights are still set where you weigh and invoice today. The ticket doesn’t pretend to know the weight in advance.

Can it read Spanish and Korean cut names?

Yes. Names like arrachera, LA galbi and 삼겹살 are matched to your catalog items, with the original phrase kept on the line.

Which systems can approved orders go to?

Approved orders are built to post to QuickBooks or be handed off as an import file or CSV for systems like Entrée, DDS and Sage.
